Born in the Shadow
of the Royal Gorge

Coffee Cave started with a simple conviction: Canon City deserved a coffee experience that matched the raw beauty surrounding it. Not a chain. Not an afterthought. A place where the beans are roasted with intention and every pastry is made from scratch each morning.

Tucked along County Road 3A, our space draws its name from the intimate, cave-like warmth we've cultivated — dark walls, low light, and the rich aroma of freshly ground coffee pulling you in before you even cross the threshold.

We roast on-site, every Tuesday and Friday, in our 5-kilo Probat. That means every bag you take home — or every cup you drink here — hits its peak within days of roasting, not months.

Our green coffee buyers travel to Colombia, Ethiopia, Guatemala, and Kenya, selecting lots that reflect the terroir and craft we believe every sip should carry. No commodity blends. No fillers. Just origin-forward coffee, roasted to highlight what makes each region distinct.
